Kritamo or rock samphire is a food that combines everything: taste and multiple culinary possibilities, unique history and tradition, as well as amazing properties as part of a modern healthy diet.
It is an ancient and precious ingredient in the diet of the Mediterranean coastal peoples, growing wild and solitary on the rock by the sea.
Samphire has its own unique taste. In Greek traditional cuisine (and in the cuisine of other Mediterranean peoples) it is used as a ‘flavor enhancer’, in carefully defined quantities due to its concentrated aromas.
It can be eaten on its own, as a snack or as a salad (with oil, lemon or vinegar it can be used to make an omelette, or it can be used to add flavor to country salad, dacos, potato salad or tzatziki. It can also accompany fish, seafood or cold meats or be used in any other way your culinary creativity dictates.
