Anchovy from the crystal waters of the Aegean is considered one of the most delicious fish of its kind. It is traditionally fished mainly from the area of Mount Athos.
The anchovy is traditionally processed by hand. It is seasoned with coarse sea salt and remains in barrels for maturing for 2-3 months. The salt is removed, then it is carefully filleted by hand one by one and placed in Greek organic olive oil from where it gets its final flavors.
