Kimchi is sour pickled Chinese cabbage and goes well with actually any meal! Kimchi is preserved by wild lactic acid fermentation, without additional starter cultures.
Depending on the region and family in Korea, the kimchi is composed differently. At Fairment it is used Chinese cabbage, leeks, garlic and ginger and deliberately avoided fish and soy sauce and too much chili for a soy-free, vegan and mildly spicy kimchi.
