Its deep purple color, the typical aroma of the variety, which combines the classic olive-tomato with dried fruit, cherry-plum, earthy notes and spices, the integrated tannins in the mouth that offer a solid body with backbone, harmony and very long duration, make up this seductive wine with the well-known aristocratic distinctive character of the variety.
The vinification occurs with the careful extraction of the components of the skins and the time depends on the maturity of the vintage. The new wine is placed in oak barrels where malolactic fermentation takes place and remains there for a year. This is followed by bottling and ageing in the bottle.
From the creation of the vineyard, the principles of organic farming are applied. The cultivation aims not only to take from nature to produce grapes of high value, but also to protect and preserve the basis of the vineyard ecosystem.
