It is a special variety of bean only found on the island of Lemnos, with the scientific name Vigna Unguiculata. It is similar in appearance to the well-known black-eyed bean, but it is dry, smaller in size and white in colour at the tip, and its production presents several difficulties, particularly at the stage of cleaning and separation from foreign matter.
Its cultivation, apart from the initial sowing stage, is manual and has been revived in the last decade in central and eastern Lemnos, with the areas of Atsiki & Varos being famous for their quality of this species.
Serving suggestions: It is ideal for summer, fresh salads and is also classically cooked as a red soup!
