Arrowroot is a type of starch that is extracted from the root of the arrowroot plant which grows in South America and India. It contains vitamins and minerals and is used as a thickening agent in sauces, marinades and glazes. The difference between it and the better known thickening agents such as corn flour is its neutral taste, its strong thickening ability and its ability to thicken in acidic sauces (such as fruit sauces).
